What is Groundnut soup?
Groundnut soup is a nutty, spicy, aromatic and delicious Ghanaian soup, which is traditionally served with omotuo (rice balls), fufu and other carb based dishes. Groundnuts paste/peanut butter is used in various west African cuisines, however Groundnut soup is a very popular dish in Ghana, as the simple ingredients such as tomatoes and onions to mention a few, perfectly compliment the sweet and nutty flavor to the peanut butter.
Ingredients needed for 5-6 servings
4-5 tbsp peanut butter
2 large onions
4 cloves of Garlic
Half a medium sized ginger
3 medium -large tomatoes
6 Garden eggs (optional)
A whole (boiler) chicken/fowl of your choice, chopped to portions
(optional)
Medium sized chopped beef or lamb
5 okra (with ends trimmed)
1-2 scotch bonnet peppers (add more for extra heat)
1 tbs tomato paste/puree
1 rosemary sprig (optional)
Seasoning of choice
salt
Water to mix with the peanut butter
Preparations
- Blend one onion, 4 cloves of garlic and ginger until smooth in a food processor.
- - Add the blended vegetables to the soup. Bring to the boil under a low to medium heat.
- - While the soup boils, make the peanut butter sauce. Option (a)Scoop 4-5 tbs od smooth peanut butter into a saucepan and add 1 tbs of tomato puree/paste and on low- medium heat. Consistently stir, while adding 1- 2 cups of water little at a time until the peanut butter melts and mixes with the tomatoes paste. Option (b) Alternatively, blend the smooth peanut butter and tomatoes paste in a food processor with half a cup of water.
- - Add option (a) method of peanut butter sauce to the boiling soup, once the oil separates from the peanut butter. For option (b), add the blended peanut butter to the soup straight after blending. Boil the okra in the soup, and allow the soup to simmer for 15-20 minutes until the oil appears on the surface of the soup.
- - Taste the soup for extra salt/ seasoning.
- Serve with rice balls or any carbs of your choice.
